Saro, as we all call him, is the Sassongher’s Chief Barman and a real character. Rosario Margareci, a.k.a. Saro, has been with us since 1995. With his friendly and outgoing personality, over the years Saro has become a point of reference for staff and customers alike.

Perhaps this is due to his frank and sincere nature, perhaps for his innate ability to interpret tastes and flavours, or his natural aptitude for entertaining relationships at the bar thanks to his contagious likeability – whatever it may be, Saro knows how to transform a moment of relaxation at the bar into an authentic experience to savour.   

Rosario Margareci: Professionalism and inspiration

For the perfect Chief Barman, no cocktail has secrets. When a customer orders a drink at the bar, attention is undoubtedly paid to the offering on the menu, with the choice made according to the proposals. But often something more is expected. Each person can expect to be understood in the flavours, to be offered the right cocktail for that specific moment of the day, often requesting something new. It is essential that a leading figure like the Chief Barman knows the various ingredients perfectly and somehow understands how to interpret the customers’ wishes. The ability to prepare each drink is also greatly appreciated, with a touch of flamboyancy never going astray.

This is Saro and much more. Having won a number of awards in a range of international competitions, Rosario Margareci is also the 2016 A.B.I. Professional of the Associazione Barmen Italiani Competition. Thanks to the great professionalism developed throughout the years within hotels and resorts of international standing, based merely on an exchange of words and a couple of clues, the Sassongher’s Chief Barman knows how to find the perfect drink to serve.  All this ensures that customers can experience a moment of relaxation as a moment of infinite pleasure. One to be savoured and remembered.

“Impossible” cocktails at the Sassongher

We are often asked for “something new” at the bar. This is the magical moment that Saro looks forward to. Creativity and whim radiate in a single moment, as our Chief Barman is swept away with ideas that include combinations of wines and spirits to create surprising new drinks. Saro is known as “the King of Impossible Cocktails” due to his mastery when it comes to blending aromas with alcoholic and non-alcoholic ingredients in an innovative way, to create surprising tastes. And what a treat it is to watch the spectacle of his cocktail preparation! 

Sarotonic. A Sassongher drink offering for you.

Mr Saro wanted to share the recipe for a simple but special drink with friends of the Sassongher. The name of this beverage is the “Sarotonic”, a mix of scents and stories.

Prepare directly in a glass full of ice.
Add in
Juniper berries and a slice of ginger to give a strong and sincere perfume, combined with redcurrant berries, in honour of Saro’s host land, South Tyrol.
Combine 50 ml of “The Barmaster Gin”, fill with “Fever Tree Elderflower” and finish with a
twist of orange and lemon in honour of Saro’s land of origin, Sicily. Complete with a spray of “Gin Puro+ Waiting For The Sun”.
Decorate to taste, perhaps with a slice of lemon.
Drink in small sips.
