His name is Massimo Busin. He is the Chef who creates the extraordinary Hotel Sassongher’s signature dishes, internationally renowned and admired. What is his secret?  Experience, creativity, imagination, quality of the raw ingredients, respect for the local cuisine and a huge passion for food

Massimo Busin Chef. His Story

Massimo Busin was born in Falcade, the province of Belluno, in Northern Italy. Strong mountain roots laid the foundation for his commitment and determination that took him far from his home town to follow his passion for food.

With natural charm, his uncompliated approach and great humility, Massimo leads us through the discovery of his true path, which unfolds and guides us to the present day where he is the manager of the Hotel Sassongher’s kitchen.

I have always had great passion for cooking!  I don’t know exactly when this passion was born. I think it has always been present in me,  something innate in me”, Massimo tells us.  “Besides, I love eating and I love good food!”

It is his love for tastes and good flavors that inspired him to travel and to discover many different and important Italian cuisines. This became,for him, the foundation of his creativity in developing new dishes.

 

Busin’s vision

The Hotel Sassongher’s Chef firmly believes in the importance of solid foundations on which to build our own cuisine style.  With simplicity and pure honesty Busin tells us:  “in the kitchen we cannot have second rate activities. To create great dishes you need to know how to perfectly cut the potatoes and how to perfectly chop the onions”.  It is clear that for Massimo, cooking is not a sacrifice, rather a unstoppable passion to enjoy the art of cooking from it’s ground roots.

Today we tend to put aside the traditional teaching, which is what makes the difference, together with the quality of the raw ingredients. Every single action in the kitchen is important and only as a whole we can build excellence”.

In Busin’s vision, he believes that even the high technology present today in modern kitchen’s are fundamental but must not prevail over the basic groundwork of good authentic cooking. Only on this basis, together with patience and creativity, can you truely create your own style, day after day.

Mantua, his first significant food experience

It’s in Mantua, Lombardia, at a historical restaurant lead by Chef Massimo Ferrari, where Busin has his first funadmental step:a brand new ambience, perfectly maintained down to the last detail, innovative dishes with authentic flavours:  it was a flash of brilliance for me!”.
From that day  Massimo Busin’s journey was to simply get closer to the most famous Chefs to learn the secrets of haute cuisine.

Experiences that have led him far and wide and then to return to the Hotel Sassongher, to delight us and share with us his unique dishes, which are a rich harmony of flavors.

In Padua, Region of Veneto Italy, Massimo Busin works for Chef Luigi Biasetto, a great master pastry chef. In addition to the secrets of the kitchen, here he learns the organization of work, extreme precision and attention to detail, qualities that are now Busin’s professional trademark.

After the experience in Padua, he then moves to Rome, where he works with Anthony Genovese, the “Chef par exellence, who lives and breaths cuisine with great humility and infinite passion“.  Here Massimo Busin absorbes the style of the great Chef, learning the wisdom and the art of cooking.

Over the next 20 years Massimo refines his training and masters his art before coming to the Hotel Sassongher in 2016 to take on the responsibility of managing the kitchen in his own unique style.

The spectacular event La Dolomitica 2018 saw the participation of Hotel Sassongher’s cooking team, lead by Chef Massimo Busin.  At high altitudes, in the Sas Dlacia meadows, one of the most beautiful place in the Dolomites, the best Chefs showcase their exclusive dishes accompanied with the best wines.
